BAKING WHITE CHOCOLATE, RASPBERRY & MACADAMIA NUT COOKIES

White Chocolate, Raspberry & Macadamia Nut Cookies Recipe

I love cookies and cookie dough, and my favourite flavour combinations are white chocolate with macadamia nuts, and white chocolate with raspberry. So, I decided to make a batch that combined them all- the ultimate heavenly cookie!

They did turn out very heavenly indeed, and were literally packed full of ingredients. I want to share the recipe with you, so that you too can enjoy these little pieces of joy I created. First you need to start by making the basic cookie dough mix (I used this recipe). Make sure not to add any water to the mixture however, even if it looks like it needs it, as the juice from the fresh raspberries will add a lot of extra moisture.



Finally, throw in all the white chocolate (I used leftover Easter egg) and macadamia nuts that you want, plus half a cup of fresh raspberries. Mix it all together and then lay out 6 large cookies worth of mixture on a greased baking tray. I baked mine for 20 minutes at Gas Mark 4; but your oven may vary, so keep a close eye on them.
