I hope you are feeling hungry, as I baked some delicious banana cupcakes with cream cheese frosting, and want to share the recipe with you. So, get that oven pre-heated to 190C, and let’s begin…
For the sponge, you will need:
2 Cups Plain Flour
1tsp Baking Powder
1 Cup Light Brown Sugar
1/4 Cup Unsalted Butter
2 Large Eggs
2 Cups Chopped Banana
2 tsp Vanilla Extract
Begin by creaming the butter and the sugar together, before beating in the eggs. Next you want to add in the flour and baking powder and mix until there are no lumps. Finally, add your banana and vanilla extract to the mixture, then whisk with an electric mixer until smooth.
You are now ready to divide your cake mix into 12 cupcake cases (I could only fit 11 on my tray). I used this cute Woodland Creatures Baking Set (£5.95) from Flamingo Gifts as the design is just so sweet. Bake your cupcakes in your pre-heated oven for 17 minutes. When you remove them, they should be springy to the touch and you should be able to insert a knife into the middle of one and have it come out clean.
When the cupcakes are cooling, you need to make your cream cheese frosting to go on top. For this you will need:
1/2 Cup Butter
1/4 Cup Cream Cheese
1 Cup Icing Sugar
Throw all these into a bowl and cream until all mixed together and smooth. You can make this to taste; so feel free to add more butter, cream cheese or icing sugar until you get a flavour and consistency you’re happy with.
Lastly, cover your cupcakes in frosting and decorate. I think the little woodland animals look great on top.
