
Today i’m sharing my festive take on sweet treat Rocky Road with you. This is a great traybake to put a holiday spin on and inject some Christmas colour into. I hope you enjoy making this crunchy, chewy delight.You will need: white chocolate, McVities Digestive Bites, dried cherries, cranberries or raisins (I only like raisins, so I used those), candy canes, red and green M&Ms, mini marshmallows, and red and gold sprinkles.
First you need to break all of your white chocolate into squares, pop it in a ceramic mixing bowl and place it over a boiling pan of water, to melt the chocolate. Make sure that you keep constantly stirring the chocolate until it has all melted and don’t keep it constantly on a high heat or it will burn.
Now that the chocolate is melted, it’s time to add all of your ingredients and mix so that everything is well coated evenly in chocolate. It really is as easy as that to make Rocky Road.
Finally, spoon the mixture into a fairly deep baking tray, cover in candy cane pieces, as well as red and gold sprinkles, then refridgerate for a few hours until solid.
Cut your Rocky Road into individual portions and serve. You could also wrap them up as little Christmas gifts. I love Rocky Road as you get so many different textures and flavours in one treat. Are you going to try making this?
